Zucchini Quesadilla & Black Bean

This healthy dinner recipe is perfect for busy nights, diet plans will leave you satisfied and still on right way.

Ingredients

  • 1/2 cup canned black beans, rinsed and drained
  • 1 cup chopped zucchini
  • 1 teaspoon cumin
  • 2 teaspoons olive oil
  • 2 whole wheat tortillas
  • 2 tablespoons salsa
  • 1/4 cup shredded cheddar cheese

Instructions

  • 1.Saute first 4 ingredients for 5 minutes
  • 2.Place the mixture on tortillas, sprinkle with cheese
  • 3.Fold in half and cook in pan till cheese melts and tortilla is toasted. Cover with the sauce.
