  • 1.Preheat oven to 350 degrees. Coat a 6-ounce ramekin with nonstick cooking spray.
  • 2.Crack 2 eggs prepared and cover with 2 tablespoons low-fat milk , 1 tablespoon chopped fresh chives 1 tablespoon chopped fresh basil and a pinch of salt and black pepper.
  • 3.Bake for 15 minutes, till eggs are set.
  • 4.Serve with melon and 1 slice of whole grain bread topped with 1 teaspoon butter.
